A Coconut Oil Series Part 4

This breakfast dish is wonderfully easy and unique.
Instead of cooking your french toast with a little bit of butter or oil, I learned from my Mom to fry the bread in the coconut oil. Not only is this healthier than a traditional frying fest, (the coconut oil doesn’t turn bad when reached at a high temperature, like most traditional oils used when frying) it tastes amazing!
Whip up your eggs,
I added Maple to my egg mixture.
You can easily add Vanilla or any other flavoring you have in your pantry.
This French Toast is out of this world when cooked this way!
Once you have a nice stack of bread cooked,
Sprinkle with snow (powdered sugar) and skip the syrup of you like
You can add some fresh fruit that you might have on hand.
I had some ripened pears that were needing to be eaten up and were a very nice touch.
The flavor of coconut is not very strong in this recipe, especially if you add some flavoring to your eggs.
My mom was visiting when I made this. It was just the right treat for us and wonderful fun to photograph

Oh Elizabeth, that looks wonderful. You are making my mouth water. Do you think you can come to my home and make it for me?? Yum! I’ve been starting to cook with the coconut oil more (since you have inspired me to do so) I love putting a dollop in my rice while it is cooking. (omit the butter) It gives it a hint of coconut and the smell is heavenly!
